Pancakes
1 cup flour
4 tbsp powdered sugar
2 tsp baking powder
¼ tsp baking soda
¾ cup + 2 tablespoons whole milk
1 egg
1 tbsp melted butter
1 tsp vanilla extract
Preheat griddle to 375°F.
Whisk together all the dry ingredients, then in add the egg, butter and vanilla into separate sections of the flour mix. Finally, add the milk while whisking everything together. (this avoids cooking the egg with the warm/hot melted butter and solififying the butter with the cold milk).
Add butter to griddle surface, then pour a large spoonfull of batter for each pancake. Cook till done
Waffles
¾ cup flour
2 tbsp powdered sugar
¾ tbsp baking powder
1 egg
1 tsp vanilla
¾ cup water
3 tbsp very soft butter
Combine flour, sugar and baking powder. Separate the egg; combine the yolk, vanilla, water and combine into the flour mix. Mix in the softened butter.
Whip the egg white to soft peaks, then fold it into the batter.
Cook about 7 minutes
Dutch Baby
2 eggs & 1 egg white at room temperature
⅔ cup milk, at room temperature
2 tbsp sugar
¼ tsp vanilla extract
½ cup + 2 tablespoon all purpose flour
¼ tsp cinnamon
¼ tsp salt
3 tbsp butter
Preheat cast iron skillet to 400°F.
Combine all ingredients in a blender.
Melt the butter in the skillet, then pour the batter into the skillet.
Bake for 20 minutes
Topping:
Powdered sugar
Splash of lemon juice
