Preheat griddle to 375°F.
Whisk together all the dry ingredients, then in add the egg, butter and vanilla into separate sections of the flour mix. Finally, add the milk while whisking everything together. (this avoids cooking the egg with the warm/hot melted butter and solififying the butter with the cold milk).
Add butter to griddle surface, then pour a large spoonfull of batter for each pancake. Cook till done
Preheat cast iron skillet to 400°F.
Hold back 1 egg white and whip to soft peak
Mix all the dry ingredients, then mix together all ingredients.
Blend the whipped egg white into the mix.
Melt the butter in the skillet, then pour the batter into the skillet.
Bake for 20 minutes

Splash of lemon juice
